With 250 hectares of well exposed vineyards and excellent chalky soils, you’ll love to stroll through our vine rows on top of the hill slopes. You’ll also discover the fermentation process in our thermo-controlled cellars, one of the most important steps of production, carried out with the double objective of obtaining the best wine whilst respecting the environment. Each estate having its own distillery, you’ll admire the pot-stills belonging to “Domaine de Chez Maillard”, where wines are distilled according to the tradition in the Charente region. Having both time and place available to age Cognac is a real privilege. You’ll enter the universe of ageing cellars , and discover the paths to paradise followed by “eaux-de-vie”. We’ll show you the “barrel cellars”, where the cellar-master carefully monitors each batch of spirit in order to match maturation and ageing potential, this in 350 & 400 litre oak barrels. Finally, we’ll be pleased to initiate you to the golden rules of Cognac tasting in our shop adjoining the distillery.

You’ll see the birth of the finished product while looking at the bottling chain. Once the Cognacs are filtered, the bottles are rinsed with Cognac; this is the last step in production of a Single Estate Cognac.
